Bean Salsa

So the Super Bowl is this weekend.  Normally I'd make some wings and chips and dip and maybe some pizza.  This year I'm going to try a new approach.  Sure I'll still have the wings-can you really watch football with them?!  But here's another recipe to try with your chips, or even just as a side on your plate that's good for you.  I got this recipe from my coach Melanie and it's great!  We can still eat good food and have it healthy right?!

What You'll Need:

1 Red onion finely diced
1 can of Black Beans drained and rinsed
1 can of Kidney beans drained and rinsed
1 avocado sliced into chunks
1 tomato diced
1 TBSP apple cider vinegar
2 TBSP salsa
1 1/2 cups of frozen corn thawed and drained
3 TBSP Greek yogurt
Olive Oil


Mix all the liquid ingredients together, then add in the rest of them and stir together.  Serve with Tortilla Chips-preferably a natural brand with very few ingredients.

Transformations

Here are Andrea's results after completing Beastbody and drinking Shakeology!  Toned up for sure!  Awesome!








 OMG here is Ashley.  She lost 65 lbs and 75 inches all over after completing Insanity, T25, and eating clean and drinking Shakeology.  It didn't come easy, but it was doable for her and boy did she do it.  She is such an inspiration. I'm amazed at her results! Wow did she did bring it or what?!

21 Days to Create a Habit

Can you believe it is already the 21st of January? Was your New Years Resolution to get in shape and exercise more or eat healthier? It takes 21 days to create a habit. How are you doing on yours?

Is your resolution or goal already history because change wasn't coming fast enough? Did you join that gym but find your motivation slipping? Who is keeping you accountable? How is your nutrition doing? Did you make a pack with a friend to workout together, but already have made excuses? Did life get busy? What is keeping you from reaching your goals?

This has been me every single year; but not this year! This year I vowed to myself to make a change in my life and I'm sticking to it! I'm eating healthy, exercising almost daily, running my own challenge groups and helping people meet their own goals through accountability and support. I'm getting closer to my goals everyday. I'm now 10 pounds away from goal and getting lean and tone. No one will ever ask me when my baby is due again...talk about humiliating having to say uhhh 7 years ago!! Unless of course I'm actually pregnant! I'm doing all of this in the comfort of my own home, on my own schedule, in just 30 minutes a day. No it's not a crash diet; it's a way of life. I eat plenty and even have treats once and a while. I've never felt deprived. I exercise but not to the extent that I get dizzy or feel sick-yes I used to think that was the only way to get the results I wanted. It's healthy and it's a gradual weight loss and toning for your body. Not to mention my mood has been incredible...just ask my kids! They're loving the new me! My next challenge group begins Feb 3. I will help you every step of the way. There are different levels for everyone and every body type. My T25 Transformation

T25 was the first workout program I really suck to 100%.  I gave it my all and was happy with my results.  Lost over 9 inches total on my body!  I had about 29 cheat meals and only missed 1 workout...think of what my results would have been I had eaten better!  I'm moving onto my next program now and I can't wait for those results!  I'm upset the pictures aren't the greatest...the after shot is closer up than the before picture...they were taken by my 10 year old.  She doesn't judge! :)  But I definitely notice a difference in my body and the way my close fit...I no longer feel and look like I'm pregnant.  That's huge for me.  It was so humiliating being asked when my baby was due!

OMG...a good PB Protein bar?!

While doing some shopping today with the boyfriend, he found his protein bars he's been looking for that he loves oh so much!  Sure it some organic ingredients...and artificial sweeteners and sugar too yuck!  For about $2 a bar...let me tell you he was NOT happy when I pointed it out and told him it was just crap and put it back...haha like a kid being told no!  So I told him I'd make him some protein bars that'll be even better and healthier...and cheaper.  He wasn't buying it.  But here it is!  A perfect treat without the additives; cuz sometimes we just need a yummy treat-grab this instead of that cookie!

1 16oz. jar of all natural creamy peanut butter
1 1/4 c. natural honey
2 Scoops 100% natural whey protein powder
3 c. rolled oats


  • Heat the peanut butter in microwave or stove top for about a minute or so.
  • Add the honey and stir.
  • Mix the protein powder in next.
  • Finally, mix the oats into the mix.
  • Spread the batter into a 9x13" pan and refrigerate for a good hour or more. 
  • Cut into 1 1/2 inch squares and gobble up!
Seriously even the kids love em!

Can I afford Shakeology?

I have so many people who are interested in Shakeology but are turned off because of the price.  I can't blame them.  I did the same thing.  I about fell off my rocker when I saw the price!  Who spends $4 a day on a meal for themselves?!  Well I got to thinkin...duh I do already, but on my Latte, Number 1 at McDonalds, my "healthy" Subway sandwhich.  I was actually spending MORE than $4 a day! OMG!  And what'd I get out of it?  A miserable gut ache about 10 minutes after eating or drinking and put into a food coma!  This was it for me.  I usually had smoothies in the morning or oatmeal and then my Latte...sometimes a Grande one yikes!  The amount I spent on my ingredients for my smoothies were ridiculous, plus I added protein power to them.  This was so much easier!  Half a banana, scoop of  Chocolate Shakeology, and a scoop of peanut butter is my favorite, but I've tried several!  I honestly feel full after drinking 1 glass, usually a good 2 hours before I start to feel hungry, and by then it's almost time for my mid morning meal anyways!  I was getting hardly any nutritional value from my fast food choices.  My shake is cheaper and so much healthier for me!  I know I'm getting all the nutrients for the day that I need and it's so fast to make!  My grocery bill is down because I plan my meals out and don't eat out very much and my monthly Shakeology is incorporated into my budget now.  And then it gets better!  I get a discount!  Talk about a money saver!  That makes even more sense!  I started out just as a discount coach...did nothing but enjoy my shakes and save money.  But I decided I could do this and pay off bills at the same time so why not?!  By being a discount coach you have nothing to lose; except weight and inches.  You're not obligated to sell a things.  Just be happy, healthy, and have fuller wallets! :)  Drink up!

Kale Chips

Ok...this recipe is seriously amazing.  Whoever thought this up is a genius.  I admit I was not thrilled to make it and was really angry at myself for buying Kale when I had no intention of ever eating it!  But I got this recipe in one of my challenge groups!  I was seriously hooked.  I actually invited friends over that night and told them there'd be no junk food but I'd have Kale chips for them to eat....by the time they got there the chips were gone!  Just give em a try...you'll be surprised at how delicious they are!

What You'll Need:

A bag of Kale
EVOO
Parmesan Cheese
Garlic Powder...optional

What to do:

Heat oven to 400 degrees F.  First clean the Kale and remove stems.  Spread the Kale on a baking pan.  Drizzle EVOO over Kale...careful not to overdo it...I did this once and I had a horrible gut ache!  Then sprinkle Parmesan Cheese and Garlic Powder of Kale.  Place in the oven and bake for about 10 minutes.  Take out and let cool for a few minutes and enjoy!  MMMMMMMMMMMM

French Toast

My kids love breakfast.  Here's an easy recipe that's healthy too.  If I have leftovers, I just throw em in a freezer bag and use up during the week to cut down on time in the mornings....bonus!  

You'll Need:

4 Eggs
1/3 c. honey
1/3 c. olive oil
1 tbsp. vanilla
1 tsp. baking soda
1/2 c. coconut flour
1 1/2 banana
Stevia if you have kids that just really are picky and need that extra sweet taste.  I personally don't like to use it, but I do have a child that sometimes really requires some extra sweetener.

Heat oven at 350 degrees F.  Mash the bananas in a separate bowl.  In a large bowl combine the eggs, honey, oil, vanilla, and baking soda, then add the flour and mix.  Add the mashed bananas and mix it up until it's smooth.  Lightly spray a bread loaf pan and pour the mixture into the pan.  Bake for around 30 minutes or stick a toothpick in the middle and if it comes out clean it's ready.  Let it cool and slice just like you'd slice bread and enjoy with honey or all natural Maple syrup and add the Stevia (optional).

What is a challenge group?

So a lot people ask me what a challenge group really is.  Honestly, without my challenge group, I wouldn't be where I'm at today.  I honestly can not afford a personal trainer to right beside me while I workout. I need that motivation and support to push through or I'll give up when I feel like I can't do it anymore. This time of year everyone is rushing to the gym and buying a yearly membership...but after a few of weeks of being committed to going there, they stop. I was one of them!  Even though I knew how great it felt to workout, I still quit.  With the challenge pack, you're going to stick with it and get results!  This is a side by side comparison of the 2.  Monthly fees can range anywhere over $20 a month, plus your joiners fee.  With a challenge pack, you'll receive a DVD workout and Shakeology for 1 month.  There's workouts at all levels of physical ability and price.  So there you go - you're getting the workout and 1 meal a day for that price!  The amount of time yous spend on your workout varies.  I usually would spend at least an hour at the gym working out, plus my drive time and having to go out in the cold and finding a babysitter!  Now I can do my workouts at home while my kids are around or sleeping whenever is convenient for me that day.  Mostly I just do them in the mornings before everyone is up.  But my kids actually love watching me...making fun of me. :)  But I like that they can see I'm working my butt off for what I want and I'm showing them how important it is to be healthy!  They even get in on the action at times!  The other thing I like about the DVD's is that the week before I started my program I watched each one just to figure out the moves-I stopped and went back and redid things to get the hang of it.  So along with that challenge pack you're able to be a part of the challenge group.  It's a closed Facebook group so no one sees what's posted except those in the group.  We check in everyday and rate our day on a scale of 1-5.  Did we have a treat?  Did we stay on track?  How was the workout?  Did we give up on it or push through?  What kind of Shakeology recipe did we use?  We post of meals, recipes, and lift each other up.  I had no idea people would be so nice to me about things!  It seems like we live in a world that where so many people just care about themselves.  This support group seriously wants everyone to succeed and we push each other through our struggles and successes.  It's amazing how one motivating or uplifting comment on a bad day can completely turn your day around!  I've made some great friends just through these groups!  At the beginning of my working out, I had absolutely NO SUPPORT from anyone physically close to me besides my group.  I did have my mom whom I check in with daily who lives in another town.  She was and is still great support...although she's actually killing her own workouts now!  I'm constantly surrounded by junk food!  My support group helped me turn away from it...amazing!  And I love that we share our recipes and meals...so many ideas!  Then when the transformations start to come...oh my!  If you're not comfortable sharing pictures it's completely fine, you don't have to.  But some do and WOW.  If that isn't motivating I don't know what is!  I'm so proud of everyone in my challenge groups and I'm proud of myself for sticking to it!  You can do this too!  Let me help you get started!  Next challenge group now forming and starting February 3, 2014!  Join us and get the results you've been wanting to see!

Falling off Track

Well, I thought getting back to regular life after the holidays would be great this week.  I was so prepared for Monday, had our lunches and breakfast Shakeology made and woke up and did my workout.  All day my eating was dead on!  It felt so awesome!  Then Tuesday came...wow I couldn't get out of bed....really?  I went my whole vacation getting up and working out just fine, then this happens?!  I went to work and ate good all day, but once I got home...no workout :(  So disappointed in myself!  Wednesday was much better! Worked out and ate perfect still.  Thursday again...couldn't get out of bed!  What was the deal?!  Then went out for Mexican food...one of my favs...Although the rest of the day was perfect and I did go without eating tortillas so I felt good about that.  But then Friday....Had to leave for work out of town by 6:30am...no workout!  At a meeting all day which meant food was brought in...not good!  I feel just horrible about my week because i was making such good progress..even down another 2 pounds on Tuesday!  Tomorrow is Saturday and I have a list of cleaning to do at home so that itself will be a workout!  I definitely plan to do a T25 workout...or 3!  I'm going to stay on track now-even through the weekend.  I'm angry at myself, but what can I do?  The damage has been done and there's no going back so I might as well suck it up and move on and just make next week rock even more!  I keep telling myself...do not give in and do NOT give up!

Lemon Salmon

I love love love seafood!  And Salmon is so good for you! This is one of my favorite ways to prepare it other than just salt and pepper.

Ingredients
  • 6 oz Wild Salmon
  • 1/2 Lemon
  • 7 Green Stuffed Olives
  • 1 Tbs. Lemon Juice
  • 1 Tbs. White Wine plus a glass of wine for you to drink while preparing haha :)
  • 1 Tsp. EVOO
  • Black Pepper
Preheat oven to 450 degrees F.  Place salmon on a foil lined baking sheet.  Slice lemon into thin slices and cut olives in half.  Place the lemons and olives over the Salmon.  Mix the lemon juice, wine, and EVOO together and drizzle over the salmon.  Sprinkle it with pepper and pull up the sides of the foil and put in 2 tbsp of water.  Fold all the edges of the foil together and seal it tight.  Cook for around 10 minutes or until the Salmon flakes easily with your fork.  It's quick and easy and Delicious!  Enjoy!

Herb Roasted Chicken with Veggies

I found this recipe on my Team Beachbody site.  I was a little hesitant to try eggplant, but I told myself to try it anyways...that's what I tell my kids to do, so I guess I should lead by example.  It was really simple to make too!  My presentation isn't the greatest, but it's the taste that counts right?! 
Ingredients                                         
                                               
Raw boneless/skinless chicken breast around 6 oz per serving
1/3 eggplant
1/4 c chopped onions
1 tsp chopped garlic...I used minced and it was perfect! 
2 1/2 tsp EVOO    
1/2 tomato     
Dash of dried basil     
Dash of dried oregano
Dash of Salt
Dash of black pepper

  1. Preheat oven to 450 degrees
  2. Lightly coat a baking pan and place chicken in middle of the pan.  
  3. Wash and peel the eggplant and cut into thin slices.  
  4. Place eggplant, garlic, and onion into a large bowl.  Drizzle with EVOO and stir together.  
  5. Spread veggies around the chicken.
  6. Chop the tomato and place on top of the veggies.
  7. Sprinkle chicken with spices to your liking.  
  8. Roast in oven for 10 minutes.  Turn chicken and stir vegetables.  Return to oven for another 10-15 minutes or until the chicken is no longer pink and then vegetables are tender.

Becoming a coach

It didn't take me long before I decided I wanted to become a Team Beachbody Coach.  I already loved the products and wanted to get a discount!  But once I realized the earnings potential I wanted to learn more.  I was a little hesitant at first and wasn't believing the amount I could earn each month.  But once I dug into it and did a lil research and watched the training videos that explained how I could make money I knew it was something I needed to do!  I enrolled in my coach's Apprenticeship class and have learned so much just from the course.  I love the 1 on 1 we were able to get with each other and the coach.  Any questions or concerns were always answers and she always gives us great ideas on how to do things.  If you've ever wanted to become a stay-at-home mom, make extra money, pay down your debt, or whatever your reason it; this could be the thing for you!  You'll be a part of Team Beachbody's #2 team in the company!  We have amazing training and resources available-Training from the best of the best!  I have big dreams for this year and my business!  Message me and we can set up a time to discuss things and get you started.

Homemade Chili Seasoning

While buying pre-packaged seasonings is convenient, you can easily make your own seasonings at home and store for when you need them.  It's way simpler than I realized, plus I know what's in it and there's no added sugar or secret ingredients!
 
Ingredients

4 tbsp chili powder
4 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1 tsp dried oregano
2 tsp paprika
2 tbsp ground cumin
3 tsp salt

Mix ingredients together in a bowl and store in a Mason Jar or other air tight container.  So simple! You could also use this as a taco seasoning!
