French Toast

My kids love breakfast.  Here's an easy recipe that's healthy too.  If I have leftovers, I just throw em in a freezer bag and use up during the week to cut down on time in the mornings....bonus!  

You'll Need:

4 Eggs
1/3 c. honey
1/3 c. olive oil
1 tbsp. vanilla
1 tsp. baking soda
1/2 c. coconut flour
1 1/2 banana
Stevia if you have kids that just really are picky and need that extra sweet taste.  I personally don't like to use it, but I do have a child that sometimes really requires some extra sweetener.

Heat oven at 350 degrees F.  Mash the bananas in a separate bowl.  In a large bowl combine the eggs, honey, oil, vanilla, and baking soda, then add the flour and mix.  Add the mashed bananas and mix it up until it's smooth.  Lightly spray a bread loaf pan and pour the mixture into the pan.  Bake for around 30 minutes or stick a toothpick in the middle and if it comes out clean it's ready.  Let it cool and slice just like you'd slice bread and enjoy with honey or all natural Maple syrup and add the Stevia (optional).
